VEGETABLES CURRY

INGREDIENTS:

  1. Mixed Vegetables(Carrot, Beans, Green Peas, Potato, Cauliflower etc.) - 500 g
  2. Priyom Vegetable Masala - 2 tbsp
  3. Vegetable Oil / Coconut Oil - 3 tbsp
  4. Mustard Seeds - 1 tsp
  5. Onion - 1 cup (Sliced)
  6. Tomato - 1 cup (chopped)
  7. Ginger - 1/2 tbsp finely chopped
  8. Garlic - 4 cloves finely chopped
  9. Curry leaves - 2 stalks
  10. Green Chilli - 2 nos(chopped)
  11. Coconut Milk - 1/2 cup
  12. Water - as required
  13. Salt - To taste
METHOD OF PREPARATION: Boil the vegetables in sufficient amount of water. Heat oil in a deep sauce pan. Add mustard seeds and allow them to crackle. Saute ginger, garlic, green chilli, onion and curry leaves. Add tomato and cook for a minute. Now add Priyom Vegetable Masala and mix well. Add the precooked vegetables (along with the stock) and salt to taste. If required, add some more water. When the gruel is nearly dry, add the coconut milk and mix well. Remove from fire before it starts boiling and serve hot!
